In my opinion, here are the best spotting areas on the southeast coast of FL (excluding Fort Lauderdale and Miami because those are the best). From best to not-so-great:
-Palm Beach the Island (in winter time on weekends, there is CRAZY stuff)
-Mizner Park in Boca Raton (never been there to spot, but people always post good spots)
-Downtown Delray
-Palm Beach Gardens
-Jupiter
-Vero Beach

I was in Palm Beach Gardens for 10 minutes and saw cooler cars than I did in 4 hours in Palm Beach haha. So Jupiter is probably not as good as Delray? (I've only been in the winter but the three best spots of my life have all been there).
@lukaku Jupiter is insanely hit or miss. If you're just passing through, you might see a lot or hardly anything. At the same time, even if you hang around the area for a while, you still might see nothing. Target times to see stuff are around lunch (11:00-1:00) and dinner (5:00-7:00). It can be kinda dead otherwise.
For Jupiter, I tend to hang around the US 1/Harbourside Place area; that seems to be where the exotics usually go. But, Palm Beach Gardens is always better than Jupiter if you're around there instead. Still, Jupiter has a few hidden gems that appear every once in a while.
For example, I hung around Harbourside for about 2 hours a few weeks ago and saw like 4 Bentleys and an R8- that's about it. But, I've also just driven through Jupiter at times and seen a GT3, Wraith, Ghost, California T, Aston Martins, etc. Again, incredibly hit or miss xD
